Rhubarb Crumble Cake and Pickling Nastursium Pods


Remember that rhubarb I was telling you about yesterday?
I found a recipe here for Rhubarb Crumble Cake and it is delicious.


The cake is very moist and the tanginess of the rhubarb in the middle is very grown up.
I adore the pastel pink peaking out of the middle.
I was also motivated today to pick the pods from the Nasturtiums.


They are picked green and washed well and are now sitting in a heavy brine.
Use a china basin or a glass bowl and cover with a piece of muslin or doily to keep detritus out and leave for 48 hours.
The next step is to make up a vinegar solution and I will process them in my tiny dainty Fowler's jars.
Nasturtium pods can be used like capers. These will keep for ages, they have cost me nothing (except mere cents for the salt and vinegar) and I know there are no chemicals or sprays.

  1. Hey Tanya, I've never heard of pickled Nasturtium pods, but I do love capers.

    Looks like you grew quite a few this year.

    I love Rhubarb and your cake looks delish. In fact it was cool enough last night, I felt in the mood to cook a dessert, so it was a Rhubarb and berry crumble, mmmm.............Bring on Winter.

  2. Please do a post when you bottle the nasturtium seeds .. or at least show the end results. I grew these flowers last year and would brine the seeds as needed but never preserved them in a water bath. They are so delicious!

    Now, I'm DROOLING at the thought of rhubarb crumble cake! I'll definitely have to try this.

  5. Thank you for the Rhubarb recipe....i still have some stewed in the freezer from last year and with the new crop coming on i should really think about doing something with the old stuff
